Eggplant Parmesan

The Sunday dinner. Inspired by Bobby Flay's throw down with a New York Italian deli owner. Inside is peeled and sliced eggplant (sliced long way). These are breaded in Italian bread crumbs by an egg wash. Then these are deep fat fried. Fried eggplant is layered with marinara, fresh mozzarella, Pecorino romano and shredded mozzarella. Bake and eat. (Don't share, per Karl)

These kids were all 18 years of age or younger. Mary and I went over yesterday to watch this for free, just a few miles from our house.
