Tuesday night is Dutch Apple pancake night

Awesome. Tart Granny Smith, a special batter that gives almost a solid custard feel to the mouth.

That is much less intimidating than the strudel.

I've wanted to make one, too. It's on the cover of one of my magazines. what is the level of difficulty? (I mean is it difficult for regular cooks?)

It is easier than pancakes. First you cook the apples in the pan and then you pour the batter over it and bake for 20 minutes and it comes out like that. MM
